GUIX VERMELL ODP 2017

The white expression of our 4-hectare Montalts vineyard takes form in an ODP (or “oeil de perdrix”) wine, produced in extremely small quantities. The juice of the red Grenache grapes used to make Guix Vermell is drawn off and fermented in amphora with no skin contact. This results in a wine with a very unique flavor and tannic structure, a brand new perspective on this distinctive terroir.

After fermentation, the wine remains in amphora, aging for a period of 6 months to achieve its full potential.

A bomb of crunchy red berries: perfectly ripened raspberries just picked. Blackberry pie. It smells of grapes with secondary aromas of fermentation. Grains of red pepper. Good-natured temptation is offered by this wine. Yeasts: cherries in bread dough, sugar and anis… cherry pie. Chocolate with salt and pepper from Sichuan. Red leaves of the Cariñena from the first days of autumn. Warmth and amiability. The image that springs to mind: a precious, perfectly ripened grape enters whole into the mouth, an explosion of redness and ripe fruit. The palate and the brain become the grape. Close your eyes and feel the power of this land and its fruit. Sweet and cloying. With the passing of the hours the wine expands towards sphericity, towards roundness. It is a wine to drink with sausage and bread spread with tomato… a good loin of pork sausage, a longaniza, a butifarra… the sky and a break in the grape harvest. Breathe wine, live the land.
